Galley Disaster Risotto


Unless you're some sort of cooking prodigy, you're bound to have made mistakes in the kitchen. Burned a pot, overcooked your steak, made broccoli that looked ... well you know what I mean. We all need a recipe for these disastrous times, it also needs to be flexible for the number of people because you guested it yep it usually happens when guests are arriving. Well checkout this easy recipe sure it can take a little time but it is easy and you can get rid of the bad mood disaster feeling, with a glass of wine! Invite your guests into the kitchen, they will think you are at easy in the kitchen all the time .... ummmm just hide the burnt offerings ðŸ˜œ


Ingredients 


2 cups of mixed dried mushrooms

1 cup Arborio rice

1 tbsp olive oil

4-5 cups chicken broth you may need a little more or less chicken broth

1 tbsp of Italian mixed herbs - you can checkout my recipe for herb mixes here

salt to taste

pepper to taste

parsley flakes dried, as garnish

garlic powder to taste



Let’s get Cooking 


Soak your mushrooms in 1 cup of boiling water for 20 minutes. 

Bring your chicken stock to the boil, and once boiling turn down to a low simmer. 

Once the mushrooms are hydrated and plump, drain the water and add it to the chicken stock.

Heat the oil in your skillet on med to high

Add the arborio rice, and stir for 1 minute, ensuring to coat the grains of rice with the olive oil.

Turn the heat down to medium. Add the Mushrooms, mixed herbs and start adding chicken broth, 1/2 cup at a time, and stir until all the broth is absorbed by the rice. You may need approximately 4-5 cups of broth and approximately 40 minutes or so. Please enjoy this process! Risotto is one of those recipes that with a glass of wine in hand you can stir away the stresses of the day. 

Once the rice has completely absorbed the broth, you are ready to season to taste with salt, pepper, and a little garlic powder. Garnish with some dried parsley flakes and enjoy!


Enjoy this satisfying and creamy mushroom risotto!  The beauty of this dish is its versatility, so if you have some parmesan cheese or butter, by all means add to the finished dish!
